Ah well, I'm back now though. Internet was fine yesterday afternoon then I lay down and POOF! It's gone until the fabulous 3M gets home and gives it that patented Scottish glare and POOF! It's back on again. I really need to work on my stinkeye skills, at least when it comes to the internet.
Now for a recipe! (Please note that the recipe on the website linked in the source under the photo is not my recipe.)
Quick and Easy Ravioli Casserole
(Source)
2 1 lb. pkgs fresh OR frozen cheese (or beef) ravioli, thawed
26 oz. jar of spaghetti sauce
1 pkg. sliced provolone OR mozzarella
10 oz. pkg. frozen spinach, thawed
1 c. sliced mushrooms
1/2 c. Each: finely diced onion and Parmesan cheese
1/2 tsp. Each: garlic powder, dried basil and dried oregano
Heat oven to 400 F. (200 C.) and spray a 13" x 9" baking pan. Place spinach, mushrooms and onion in baking pan and pop into oven while preheating.
After oven is preheated remove pan and arrange one layer of ravioli over the vegetables. Pour half of spaghetti sauce over layer and sprinkle half of the parmesan cheese over the top. Layer additional ravioli and parmesan over the top and place provolone slices over all. Sprinkle with garlic powder, basil, and oregano over all.
Bake for a half hour covered, then remove cover and bake for an additional 15 or until cheese is bubbly and turning golden brown. Serves 4-6 with leftovers for lunches. Enjoy!
I'm still fighting with the pharmacy for my medication although the neurologist's office has confirmed that they sent the authorisation on January 2nd! Today both the pharmacy and the drugstore manager accused the doctor's office of lying...which they said the last time this happened as well...so am arranging to pick up proof and then switch pharmacies. I will be lodging a complaint with the national corporate offices as well. I've already had two falls because of this and am losing my ability to speak as well.
Good thing for the day: Knowing I have the support of the people with me and that they will ensure I'm taken care of.

terribly sorry about the continued pharmacy trouble. i do hope you can get your meds and get the prescriptions transferred soon!
ReplyDeleteHope you get this straightened out soon - so sorry for all your trouble!
ReplyDeleteyou should tell us all who they are so we can stop using them, too. that is absolutely ridiculous. i hope you get to feeling better soon...no more falls, ok? thank you for this delicious recipe...it's a crowd pleasing, heart (and belly) warming meal that i will have to make soon! take care!
ReplyDeleteoh I am so sorry! that should just NOT happen! I hope you're feeling better SOON!
ReplyDeleteSo sorry this hasn't been resolved yet.
ReplyDeleteI'm so sorry you are forced to suffer because of idiots. Hope you are back on track soon!
ReplyDeleteI hope you get your meds soon and can feel better!
ReplyDeleteI'm so sorry to hear about your trouble. It's so upsetting to hear someone suffering because of stupid people like this! My grandma had a similar situation at a pharmacy.
ReplyDeleteI wil be trying this recipe it looks and sounds so delicious! Best of all it seems quite simple. :)
Fer cryin' out loud. I can't believe they'd go to such lengths on a RENWAL prescription. Jerks. I hope it's resolved soon and you find a replacement pharmacy that is better at what they're supposed to do.
ReplyDeleteI hope your 'scrip situation is straightened out very soon for you. :(
ReplyDeleteThank you for sharing the recipe, these types of comfort foods make me swoon in the winter.
I am so angry that the pharmacy are being so useless and that it is having such an impact on your quality of life - and so soon after your medication got sorted out too. I hope the medication arrives soon and that your new pharmacy are decent and understand the importance of you getting your medication on time.
ReplyDeleteThe exact same thing happened to my MIL one time. She was sick, and elderly, and the pharmacy kept saying the Dr's offoce never called. The Dr. Kept saying they did call. Go park yourself at that Dr's office and have them call the pharmacy while you are there. Then have them hand the phone to you before you hang up, get the name of the person on the phone and tell her you will be in to pick up your medicine soon. It's a shame to have to go to such lengths to get people to do their job, but no one cares anymore. And i'm afraid it's going to get worse. Did you ask the Dr. For samples to tide you over? I feel for you.

That is AWFUL about the pharmacy. I hope you'll switch after this is all resolved!
ReplyDeleteWow ... I've never heard of such a thing. I'm so sorry you are being 'shafted' (an aussie saying) I hope it gets sorted out as soon as possible. Hugs Sue
ReplyDeleteI love ravioli. Chef Boyardee is a good man.
ReplyDeleteHi Jacqueline

So sorry you are having so much trouble with the pharmacy. I hope you feel better soon. Good healthy thoughts are coming your way!!
ReplyDeleteI was so disheartened to see that you still don't have your meds! It's an outrage, really. Hugs.
ReplyDeleteMeant to add that the recipe looks good and easy to make. Thank you.
ReplyDeleteWell, you've certainly had your share of frustrations. I can sympathize re. the internet! PS. I have been out of town, Up North, for a week near the Canadian border without internet or cell phone capability. Very peaceful and serene and I loved it; gorgeous sunrises and sunsets. But I have not been able to visit any of my blogger friends. It'll take awhile to read all of my email messages and to visit your posts to see what I've missed, but it's good to be back!
ReplyDeleteoh Jacqueline, I don't know if you get your health insurance through your hubby's job, but I am in HR and if you do, please have him contact the HR person immediately. Their broker really should be involved at this point, because you should not be waiting for your medication this long. UNACCEPTABLE!!!!
ReplyDeleteP.S> Thank you for the recipe ;-)
ReplyDeleteThe recipe looks great. I'm about to "have a chat" with my pharmacy about a renewal, too. Take good care!
ReplyDeleteThe casserole looks yummy! Especially on a cold, windy day like today. Sorry about the pharmacy woes - I hope it all gets figured out soon!
