This Takes The Cake!

   Hehe, bet that title grabbed your attention, didn't it! Actually, this is a post about a cake...a super simple, low-sugar cake that really is delicious. I found it on Pinterest (I can see you shaking your heads at me y'know) and, although a bit skeptical, decided to give it a try since snacky stuff that isn't high in sugar is, believe it or not, important to me. Surprise, surprise...even Jess and 3M loved it so it's definitely on the do-over list!


Go HERE for the original recipe...I, of course, had to play with the recipe so I call this:

                            Play With Me Cake

(My basic recipe, we did make a couple of small alterations in the recipe as given so it would have a lighter texture and so on.)

1 can condensed, sweetened milk
4 eggs
1 1/3 c. flour + flour for pan
1/3 c. melted butter + 1 Tbsp. for brushing cake pan
1 tsp. baking soda
1/2 tsp. Each: baking powder and vanilla extract

   Preheat oven to 350 F. and prepare your cake pan with butter and flour. (Placing a round of parchment paper in the bottom is also helpful.)

   Place all ingredients in a large mixing bowl and mix well with an electric mixer. Pour batter into cake pan and bake for 40 minutes, or until a toothpick or knife inserted into the center comes out clean. 

We added a pint of fresh blueberries and some lemon zest (1 tsp.) to the cake as well and it was wonderful! We'll also be experimenting with adding cocoa powder to the batter, etc.... and I'll let you know how those experiments turn out. I highly recommend giving this cake a try when you want something lightly sweet, quick, and easy.

For those who asked: Yes, we can report what has happened to the medical board. The Great Scot is enraged so I suspect that is what will happen.

  2. Good Morning Jacqueline, This is an interesting cake as I have never used condensed milk, well apart from in puddings. I like the idea of adding blueberries and have written out the recipe to try later in the month.
    I'm glad you are thinking of taking the issue further and reporting to the Medical Board, because there is something very wrong with how you have been treated.

  8. Cake looks delicious - you and your Pinterest! Glad the computer is working ... and 'right on' Great Scot for reporting to the medical board. Doctors and pharmacists are jobs, and if they don't do their jobs ... people get hurt. Report it!

  12. The cake sound so easy...and so delicious. Also, I'm so glad the Great Scot is likely to report the whole fiasco. Both the pharmacy and the doctor deserve some consequences for their actions.
